I want to share this recipe because it is so great and anyone will be able to make it!
What you'll need:
(Makes 8 mini apple pies)
1package of Puff Pastry Sheets (you can find these at Superstore near the pie crusts in the freezer section, they are only a couple dollars)
Cinnamon and Sugar mixture (I just did equal parts of each, but if you prefer one or the other you can add extra)
Melted Butter
2 Apples (cut into 8 wedges all together)
To start, you need to thaw the Puff Pastry sheet (allow 1-2hrs to thaw). In a package you'll get two sheets. If you would like to make more thaw both of them, but to make 8 you will only need one of the sheets. You can put the other back in the freezer.
Once your Puff Pastry is thawed, roll it out. I like to work on top of a plate or parchment paper so there isn't a huge clean up required! Take your melted butter and spread it all over the Puff Pastry sheet. Next, sprinkle your cinnamon and sugar mixture on top. It might seem like you are putting a lot on, but it will be alright!
Then you want to cut your Puff Pastry sheet and cut it into eight strips. I like to mark out where my cuts will be first to make sure that I will have enough.
Once they are cut, take one strip and pull away from the rest. Grab an apple and start rolling it up in the strip of Puff Pastry. Continue this for all 8 apple slices.
Set the rolled apples onto a cookie sheet covered in parchment paper. Use the remaining melted butter and spread a bit on the top of each rolled apple. Then sprinkle the rest of the cinnamon and sugar mixture on top of each.
Now, they are ready for the oven. Bake at 425* for 13-15 minutes, just keep an eye on them and pull them out when they look ready! It really is that easy and hardly takes up any time at all! I enjoyed mine with some ice cream! They are really good right out of the oven with or without ice cream!!
